The key lies in deconstructing the wine to rebuild it, ensuring its depth and richness at every stage. It all begins with an early harvest of Chardonnay grapes to retain their optimal freshness and natural acidity.
A Unique Terroir and Exceptional Expertise
L’Extra Brut draws its remarkable character from the Limoux terroir in Languedoc, a region renowned for its oceanic climate. The limestone- and clay-rich soils of Limoux create the perfect balance, preserving the wine’s natural acidity. Approximately 30% of the wine is aged in oak barrels, adding depth and structure. Combining centuries-old viticultural wisdom with four years of dedicated research and development, the winemaking process incorporates cutting-edge dealcoholization techniques, including low-temperature vacuum distillation, which increasingly preserves the wine’s integrity. Thanks to this triple vacuum distillation process, alcohol is gently removed while maintaining the wine’s aromatic richness. The first distillation reduces the alcohol content from 14% to 3%, the second from 3% to 0.5%, and finally, the last step achieves 0.0% alcohol.
