Great complexity, reminiscent of old Blanc de Blancs, with an extensive spectrum of caramelized nuts, candied fruit, dried spice, Mocha, and dried apricot aromas, followed by toasted bread, vanilla, brioche, and Tarte Tatin notes. A subtle hint of aniseed lingers on the finish.
PALATE
An initial burst of freshness, with a good concentration and fleshy texture and creaminess. A balanced acidity with notes of Mirabelle, plum, and marmalade. Layers of honeyed dried fruit and delicate brioche notes emerge, lending a depth of flavor. Guiding the winemaking journey is Rodolphe Frerejean-Taittinger, CEO and Director of R&D, who is leveraging his decades of expertise from the realms of Champagne and Cognac. This innovative approach places a profound emphasis on wine quality well before the elimination of alcohol begins, reshaping the principles of winemaking and expanding its horizons.

IT ALL BEGINS AT THE VINE
The process begins with a careful selection of organic Chardonnay grapes sourced from partner vineyards in the Languedoc region. Priority is given to parcels atop hillsides, where the concentration and complexity of aromas thrive. Grapes are harvested two weeks earlier than is standard in the region, ensuring an optimal concentration of acidity.
French Bloom has selected 2022 for its first opus of La Cuvée Vintage Blanc de Blancs—a vintage marked by abundant sunshine and exceptional quality. AGED IN FRENCH OAK BARRELS
Post-harvest the grapes are pressed to retain only the vin clair, with the marjorty then aged in 225-liter new French oak barrels, while the remaining portion is put in stainless steel tanks. The blending of these two parts contributes to the complexity and character of the wine, creating a harmonious blend of aromas and flavors.
AT THE CUTTING EDGE OF INNOVATION IN THE DEALCOHOLISATION PROCESS
Among the final stages in the 0.0% Wine Revelation is the dealcoholization process, and for an alcohol-free wine, certainly one of the most essential. To fully reveal the wine-making process, the French Bloom R&D team relied on the very latest innovations in dealcoholization technology for La Cuvée Vintage 2022. Utilizing low-temperature vacuum distillation with the recovery of the wine’s original aromas, this innovative process, crafted in France, carefully removes 100% of alcohol from the wine while preserving its complex aromas. The result is a final product that maintains the profile and character of the wine established at the outset, offering wine enthusiasts a singular tasting experience.
